JAMAICAN SWEET POTATO PUDDING

Ingredients

  • • 1 ½ lb. sweet potato

  • • ½ lb. yam

  • • 1 thumb ginger

  • • 1/3 cup coconut flakes or freshly grated coconut (optional)

  • • 2 cups coconut milk

  • • 1 ½ cups brown sugar

  • • 1 tbsp. vanilla extract

  • • 1tbsp cinnamon powder

  • • 1 tsp mixed spices

  • • 1 nutmeg

  • • 2tbsp melted butter

  • • 2 cups all purpose flour

  • • ¼ cup cornmeal

  • Soft Top
  • • ½ cup coconut milk

  • • 1tbsp vanilla extract

  • • 2 tbsp. brown sugar

  • • 1 tsp cinnamon powder

  • • 1 tsp mixed spices

Directions

  • Peel and grate sweet potatoes
  • Grate yam and ginger in the same container as the sweet potato, add grated coconut then use your hand to combine everything and set aside
  • In a saucepan over low heat, add coconut milk, vanilla extract, sugar, cinnamon, mixed spices, nutmeg, butter and mix until everything has been dissolved and the liquid is a little warm
  • Combine flour and cornmeal
  • Add the flour mixture and the liquid mixture to the grated sweet potato mixture a little at a time and mix until everything is nice and combined
  • Add the mixture to a greased tin and bake at 350◦ for 1hr
  • Remove the pudding from the oven and add the soft top mixture to it
  • Place the pudding back in the oven for an extra 20 minutes
  • Remove the pudding from the oven and allow it to cool down completely or for at least 2hrs before you cut it so it does not lose its form
  • Soft Top
  • In a saucepan, add all ingredients for the soft top over low heat
  • Allow the sugar and spices to dissolve in the coconut milk then remove the liquid from the stove and set it aside
