Ingredients

  • 3 ½ cups all-purpose flour + ¼ to flour surface

  • ½ cup milk

  • ½ cup sweet, mashed potato

  • 3 tbsp sugar

  • 3 tbsp softened butter

  • 2 ¼ tsp dry active yeast

  • 1tbsp oil

  • 1tsp salt

  • 2 beaten eggs

Directions

  • In a bowl, add milk, sugar, softened butter, yeast, salt, eggs and mix well
  • Add mashed, sweet potato to the mixture and mix a little to break up the potato further
  • Add flour to the mixture and combine with a spatula
  • After a few minutes, use your hand to form a dough
  • After a soft sticky dough has been formed, add ¼ cup of flour to a surface and knead the dough again until it is not so sticky but still soft
  • Add the dough back to the container then add half the oil and knead
  • Use the remaining oil to grease the container
  • Rest the dough in the container and cover for 1hr or until it doubles in size
  • Use your finger to poke the dough
  • Divide the dough into 14 pieces
  • Roll each piece into a circle then place it in a greased baking pan
  • Leave it to rise for another 10 minutes
  • Bake for 12-16 minutes or until the top is slightly brown
  • Remove from the oven and brush the rolls with melted coconut oil (optional)
