Jamaican Black Fruit Cake with breadcrumbs

Ingredients

  • Dry Ingredients
  • 3/4 cup all-purpose flour (90 grams)

  • 3/4 cup plain breadcrumbs (59.5 grams)

  • 1/2 tsp salt

  • 1 1/4 tsp baking powder

  • 1/2 tbs cinnamon powder

  • 1/2 tbs nutmeg

  • 1/2 tsp mixed spice

  • 1 1/8 cups dark brown sugar (225 grams)

  • Wet Ingredients
  • 2 sticks of butter (1 cup or 226 grams)

  • 4 large eggs (1/2 tbs lime and orange zest) (1/8 tsp lime juice)

  • 1 tbsp vanilla

  • 2 cups fruit

  • 1/4 tsp almond essence

  • 1/2 tsp rose water

  • Browning (as preferred)

  • 1/4 cup rum and wine mix

Directions

  • Preheat your oven to 280°F (137°C). Grease and line your baking pan.
  • In a bowl, combine the dry ingredients: flour, breadcrumbs, salt, baking powder, cinnamon powder, nutmeg, mixed spice, and dark brown sugar.
  • In a separate mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in lime and orange zest, lime juice, vanilla, almond essence, rose water, and browning.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the fruit, then add the rum and wine mix. Mix until evenly distributed.
  • Pour the batter into the prepared pan, spreading it evenly.
  • Bake in the preheated oven for approximately 1 to 1.5 hours or until a toothpick inserted into the center comes out clean.
  • Once baked, let the fruitcake cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  • Optionally, you can feed the cooled cake with additional rum and wine mix for enhanced flavour.
