PLANTAIN BREAD

Plantain Bread is a moist and delicious bread . Plantain Bread is very similar to a Banana Bread. The only difference it that you are using Plantain instead of Banana.

Ingredients

  • 2 Plantain

  • 2 eggs

  • 3tspn butter

  • ½ cup of milk

  • 1 tsp cinnamon powder

  • 1tsp nutmeg

  • ¼ tsp salt

  • 1 tsp baking soda

  • 1.5 cups of all-purpose flour

  • ½ cup of oatmeal flour

  • 1 cup granulated sugar

  • 1 tbsp. vanilla

Directions

  • In a bowl, mash 2 plantains until they’re of baby food like texture (If you want chunks of plantain in your bread, don’t mash your plantains as much)
  • Crème butter and sugar in a separate container
  • Add eggs to the creamed butter and sugar
  • Add mashed plantain, milk, vanilla extract, nutmeg extract, rose water, lemon juice to the mixture
  • Mix everything to combine wet ingredients then rest it to the side
  • In a separate container, sieve oatmeal flour, purpose flour, baking soda, cinnamon, salt then whisk to combine
  • Add dry ingredients to wet ingredients ½ at a time
  • Mix and fold until everything is nicely combined
  • Add the mixture to a greased loaf tin
  • Bake at 350◦F in a preheated oven for 1hr

  • *1 tsp baking soda=3 tsp baking powder
  • * ½ cup oatmeal flour = ½ cup of oatmeal blended into flour like consistency
