JAMAICAN EASTER BUN

Jamaican Easter Bun is a favorite snack of Jamaicans especially at Easter Time. This is usually eaten with cheese.

Ingredients

  • DRY
  • 3 1/2 cups all purpose flour

  • 1tbsp mixed spice

  • 1 tbsp. cinnamon

  • 1 tbsp. active dry yeast

  • ½ tbsp. ginger powder

  • ½ tbsp. nutmeg

  • 1 pinch of salt

  • WET INGREDIENTS
  • 1 cup Guinness/ Dragon stout

  • 1 cup brown sugar

  • 3tbsp unsalted butter

  • ½ cup sweet wine

  • 2tbsp mixed fruits jam (or any jam of choice)

  • 2tbsp honey

  • 1tbsp molasses

  • 1tbsp vanilla extract

  • ½ tbsp. rose water

  • 2tsp browning (add more if you want your bun darker)

  • 1tbsp oil

  • Glaze:
  • ¼ cup wet ingredients mixture

  • 1tbsp coconut oil

  • 1tbsp honey

  • 1tbsp jam

  • Other ingredients:
  • 1 cup of soaked raisins (or mixed peels/fruits)

  • 1 egg

  • ¼ tsp lemon juice

  • 1/8 cup flour to dust surface

Directions

  • In a saucepan over low heat, add all wet ingredients except the oil and add a pinch of salt
  • Allow this to heat up so the butter melts and other ingredients dissolve
  • Turn your stove off and allow the liquid to cool a little (it should be warm but hot)
  • In a bowl, add flour and all other dry ingredients
  • Add fully drained raisins/fruits to the dry mixture then whisk to combine
  • Add one beaten egg with added lemon juice to the wet ingredients’ mixture and whisk
  • Add the wet ingredients to the dry ingredients a little at a time to form a soft lightly sticky dough
  • Grease a big container and add oil to the dough
  • Place the dough in the container and cover with cling wrap or a damped tablecloth
  • Leave this to rise for 1 hr. or until the dough doubles in size
  • Remove the dough from the container and punch it with your fingers to remove air pockets
  • Flour your surface then knead the dough and roll it in a ball
  • Cut the dough into 2 or more pieces then tuck the ends and shape it into a loaf
  • Place each loaf in a greased loaf tin and bake for 40mins at 320◦ or until a toothpick inserted in the middle comes out clean
  • Add Glaze to your buns
  • Serve and enjoy
  • For Glaze
  • Add all the glaze ingredients to a saucepan over low heat and allow everything to come together
  • Remove from stove and use a pastry brush to add glaze to your buns. Add as much or as little as you desire
