Perfect Jamaican Breakfast

Ingredients

  • ½ lb salt fish (cod fish)

  • 3 cups all-purpose flour

  • 1/3 red, green, yellow bell peppers

  • ¼ small red onion

  • ½ tsp baking powder

  • ½ tsp salt

  • ½ tsp pepper

  • Scotch bonnet pepper (according to your liking)

  • 2 ½ cups water

  • 2 ½ cups oil for frying

Directions

  • Boil Saltfish for 6 minutes to remove some of the salt
  • Remove the scales and bones then break your saltfish into small pieces and rest it to the side
  • Add the saltfish to 3 cups of all purpose or plain four
  • Add bell peppers, onion, and scotch bonnet pepper according to your liking
  • Add baking powder, salt, pepper
  • Add water and mix
  • In a pot over low heat, use a spoon to add your fritters to the oil
  • Add 1 spoon full or more depending on the size you want for your fritters
  • Fry them for 4 minutes or until golden brown and crispy on each side
