Pineapple Teriyaki Shrimp

Ingredients

  • Shrimp
  • 500g pack Shrimp

  • 1 tsp paprika

  • 2 tsps. Onion powder

  • 2 tsps. Garlic Powder

  • A sprinkle of black pepper

  • Sauce
  • 1 tbsp cornstarch

  • 1 cup pineapple juice

  • ¼ cup soy sauce

  • ¼ cup Mirin

  • ¼ cup sugar

  • 3 tbsp rice wine vinegar

  • Other Ingredients
  • Cubed pineapple (quantity depends on your liking)

  • Cubed Carrot (optional and Quantity depends on your liking)

  • Sesame Seeds

  • 1 tbsp olive oil

  • 1tbsp finely chopped garlic and ginger

Directions

  • In a bowl, season shrimp with onion powder, garlic powder, black and cayenne pepper then rest it to the side
  • Prepare the sauce by combining all the listed ingredients for the sauce, mix until all is dissolved then rest it to the side
  • Add 1 tbsp olive oil to a pot over medium heat and cook shrimp for about 5 minutes
  • Remove the shrimp from the pot and set it aside
  • Add the finely chopped garlic and ginger and the cubed pineapple to the pot and sauté for 3 minutes over low heat
  • Add the sauce to the pot still over low heat, add cubed pineapple and allow this to simmer for 3 minutes or until the sauce is getting thick
  • Add the shrimp to the sauce and allow this to cook in the sauce for an additional 3 minutes
  • Add sesame seeds, serve and ENJOY!

Notes

  • If you don’t have Mirin, you may use more sugar to get that sweet taste
