Ingredients

  • Dry Ingredients
  • 2 cups all-purpose flour

  • 1 tbsp active, dry yeast

  • 1/2 teaspoon allspice

  • 1/2 teaspoon freshly grated nutmeg

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger powder

  • 1/2 teaspoon mace

  • 1/2 teaspoon ground cloves

  • Wet Ingredients
  • 1 cup stout

  • 1/2 cup brown sugar

  • 3 tablespoons unsalted butter

  • 2 tablespoons oil

  • 2 tablespoons jam

  • 2 tablespoons honey

  • 2 tablespoons molasses

  • 1 teaspoons browning

  • 5 tablespoons red wine

  • Other Ingredients
  • 1 egg

  • 1 teaspoon lemon zest

  • 1/2 teaspoon salt

  • 1/2 cup soaked raisins

  • Glaze
  • 1 tablespoon butter

  • 1/2 tablespoon honey

  • 1/2 tablespoon jam

Directions

  • Add the wet ingredients to a pot over low heat and allow the sugar, jam, and butter to dissolve completely. Do not boil, remove it from the heat and allow this to cool down completely
  • After this has cooled down, add the lemon zest to the egg, whisk, and add it to the cooled wet ingredients then set it aside
  • Add all the dry ingredients in a bowl then add the raisins and ensure they are fully coated
  • Add the wet ingredients to the dry ingredients, and mix well
  • All the mixture to a greased and lined tin and bake at 350o for 1hr and 15mins or until a toothpick inserted in the middle comes out clean
  • When the bun is almost finished, add all the ingredients for the glaze over low heat and stir until you have a syrup
  • Brush the glaze all over the bun and allow it to cool down
  • Enjoy with or without cheese!

Notes

  • Ensure that the liquid is at room temperature before adding the eggs. Adding warm liquid to the dry ingredients will result in a cake-like texture.
  • I used Guinness stout but you can use dragon stout
