Ingredients

  • 500g raisins

  • 500g currants

  • 500g prunes

  • 600g cherries

  • 100g mixed peels

  • 3 pieces died orange peel

  • 1-2 cinnamon sticks

  • 2 tbsp vanilla extract

  • 2 tsp freshly grated nutmeg

  • 1 tsp cinnamon

  • ¼ tsp cloves

Directions

  • Remove small stems/stalks from raisins and currants if there are any and wash well
  • Add the pieces of orange peel to 2 cups of water and allow this to come to a boil
  • Add the washed raisins and currants, prunes, mixed peels, cherries and spices
  • Add enough water to reach the same level of the fruits
  • Mix everything and allow this to come to a boil
  • Reduce the heat to the lowest it can go and allow your fruits to steam while checking back every 20 mins
  • Leave this to steam with the spices for 1 hr and 20 mins or until all the water has been evaporated
  • Blend the fruits with rum and sweet wine
  • Add the portion of wine and rum according to your liking
  • Enjoy
  • Allow the steamed fruits cool and remove the orange peels and cinnamon sticks
