- Dry Ingredients
2 cups all-purpose flour
1 tbsp active, dry yeast
1/2 teaspoon allspice
1/2 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger powder
1/2 teaspoon mace
1/2 teaspoon ground cloves
- Wet Ingredients
1 cup stout
1/2 cup brown sugar
3 tablespoons unsalted butter
2 tablespoons oil
2 tablespoons jam
2 tablespoons honey
2 tablespoons molasses
1 teaspoons browning
5 tablespoons red wine
- Other Ingredients
1 egg
1 teaspoon lemon zest
1/2 teaspoon salt
1/2 cup soaked raisins
- Glaze
1 tablespoon butter
1/2 tablespoon honey
1/2 tablespoon jam
Directions
- Add the wet ingredients to a pot over low heat and allow the sugar, jam, and butter to dissolve completely. Do not boil, remove it from the heat and allow this to cool down completely
- After this has cooled down, add the lemon zest to the egg, whisk, and add it to the cooled wet ingredients then set it aside
- Add all the dry ingredients in a bowl then add the raisins and ensure they are fully coated
- Add the wet ingredients to the dry ingredients, and mix well
- All the mixture to a greased and lined tin and bake at 350o for 1hr and 15mins or until a toothpick inserted in the middle comes out clean
- When the bun is almost finished, add all the ingredients for the glaze over low heat and stir until you have a syrup
- Brush the glaze all over the bun and allow it to cool down
- Enjoy with or without cheese!

- Ensure that the liquid is at room temperature before adding the eggs. Adding warm liquid to the dry ingredients will result in a cake-like texture.
