3 ½ cups all-purpose flour + ¼ to flour surface
½ cup milk
½ cup sweet, mashed potato
3 tbsp sugar
3 tbsp softened butter
2 ¼ tsp dry active yeast
1tbsp oil
1tsp salt
2 beaten eggs
Directions
- In a bowl, add milk, sugar, softened butter, yeast, salt, eggs and mix well
- Add mashed, sweet potato to the mixture and mix a little to break up the potato further
- Add flour to the mixture and combine with a spatula
- After a few minutes, use your hand to form a dough
- After a soft sticky dough has been formed, add ¼ cup of flour to a surface and knead the dough again until it is not so sticky but still soft
- Add the dough back to the container then add half the oil and knead
- Use the remaining oil to grease the container
- Rest the dough in the container and cover for 1hr or until it doubles in size
- Use your finger to poke the dough
- Divide the dough into 14 pieces
- Roll each piece into a circle then place it in a greased baking pan
- Leave it to rise for another 10 minutes
- Bake for 12-16 minutes or until the top is slightly brown
- Remove from the oven and brush the rolls with melted coconut oil (optional)
