SWEET POTATO CORNBREAD

Ingredients
1 cup sweet potato
1 cup All-purpose flour
½ cup Cornmeal
½ cup Sugar
½ tsp Cinnamon
½ Freshly gradted nutmeg
¼ Cloves
1 pinch of slat
40g Butter
1 tbsp baking powder
1 cup Milk
2 eggs
¼ tsp Lemon/ lime juice
Directions
- In a bowl, combine flour, cornmeal, salt, nutmeg, cinnamon, cloves and baking powder then set it aside
- In a separate bowl, add sweet potato, butter, sugar, lemon juice and eggs one at a time while mixing
- After both the wet and dry mixture is ready, combine and mix well.
- Add the mixture to a greased loaf tin and bake at 350° for 45mins or until a toothpick placed in the centre comes out clean
- Add butter directly on top while warm
- Leave to cool down and enjoy
