Sweet Potato Cornbread Recipe

Ingredients

  • 1 cup sweet potato

  • 1 cup All-purpose flour

  • ½ cup Cornmeal

  • ½ cup Sugar

  • ½ tsp Cinnamon

  • ½ Freshly gradted nutmeg

  • ¼ Cloves

  • 1 pinch of slat

  • 40g Butter

  • 1 tbsp baking powder

  • 1 cup Milk

  • 2 eggs

  • ¼ tsp Lemon/ lime juice

Directions

  • In a bowl, combine flour, cornmeal, salt, nutmeg, cinnamon, cloves and baking powder then set it aside
  • In a separate bowl, add sweet potato, butter, sugar, lemon juice and eggs one at a time while mixing
  • After both the wet and dry mixture is ready, combine and mix well.
  • Add the mixture to a greased loaf tin and bake at 350° for 45mins or until a toothpick placed in the centre comes out clean
  • Add butter directly on top while warm
  • Leave to cool down and enjoy
