Plantain Bread is a moist and delicious bread . Plantain Bread is very similar to a Banana Bread. The only difference it that you are using Plantain instead of Banana.

2 Plantain
2 eggs
3tspn butter
½ cup of milk
1 tsp cinnamon powder
1tsp nutmeg
¼ tsp salt
1 tsp baking soda
1.5 cups of all-purpose flour
½ cup of oatmeal flour
1 cup granulated sugar
1 tbsp. vanilla
Directions
- In a bowl, mash 2 plantains until they’re of baby food like texture (If you want chunks of plantain in your bread, don’t mash your plantains as much)
- Crème butter and sugar in a separate container
- Add eggs to the creamed butter and sugar
- Add mashed plantain, milk, vanilla extract, nutmeg extract, rose water, lemon juice to the mixture
- Mix everything to combine wet ingredients then rest it to the side
- In a separate container, sieve oatmeal flour, purpose flour, baking soda, cinnamon, salt then whisk to combine
- Add dry ingredients to wet ingredients ½ at a time
- Mix and fold until everything is nicely combined
- Add the mixture to a greased loaf tin
- Bake at 350◦F in a preheated oven for 1hr

- * ½ cup oatmeal flour = ½ cup of oatmeal blended into flour like consistency
