Ingredients

  • 3 cups roasted unsalted peanut

  • 2½ cups brown sugar

  • 2½tbsp freshly grated ginger

  • 2tsp vanilla extract

  • 1tsp freshly grated nutmeg

  • 2 cinnamon sticks

  • 4 cups water

Directions

  • In a pot over medium heat, add 4 cups of water and cinnamon sticks then allow this to come to a bowl
  • Remove the cinnamon sticks after 3 minutes or after the water changes color
  • Add grated ginger and allow this to boil for 3 minutes
  • Scrape the sides of the pot to get all the ginger in the water then add the sugar
  • Mix until the sugar dissolves
  • Add peanut, vanilla extract and nutmeg then mix
  • Allow this to come to a boil then stir then allow this to continue boiling
  • Check your pot at the 20mins and 30mins mark
  • Continue to cook over medium heat until the sugar thickens
  • Use a spoon to drop these on a flat surface
  • Allow these to cool and become firm
