3 cups roasted unsalted peanut
2½ cups brown sugar
2½tbsp freshly grated ginger
2tsp vanilla extract
1tsp freshly grated nutmeg
2 cinnamon sticks
4 cups water
Directions
- In a pot over medium heat, add 4 cups of water and cinnamon sticks then allow this to come to a bowl
- Remove the cinnamon sticks after 3 minutes or after the water changes color
- Add grated ginger and allow this to boil for 3 minutes
- Scrape the sides of the pot to get all the ginger in the water then add the sugar
- Mix until the sugar dissolves
- Add peanut, vanilla extract and nutmeg then mix
- Allow this to come to a boil then stir then allow this to continue boiling
- Check your pot at the 20mins and 30mins mark
- Continue to cook over medium heat until the sugar thickens
- Use a spoon to drop these on a flat surface
- Allow these to cool and become firm
