2 cups all-purpose flour
1/4 stick or 50g unsalted butter
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon powder
1/2 tsp mixed spice
1 tbsp ginger powder
5/8 cup brown sugar
2 tbsp freshly grated ginger
1/4 -1/2 cup water
1/2 tbsp molasses
1/2 tsp vanilla extract
1/2 tbsp melted butter for brushing bulla
Directions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon powder, mixed spice, ginger powder, and butter. Mix until well combined and a breadcrumb-like consistency is achieved.
- In another bowl, combine the brown sugar, water, molasses, and vanilla extract. Mix until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until you have a thick dough. Add a little extra water if needed to achieve the right consistency.
- Flour your dough mat and rolling pin then roll the dough out to about 1/2 inch thick
- Divide the dough into approximately 6 equal-sized portions and shape them into round bulla cakes. Place them on the prepared baking sheet.
- Knead the dough lightly for a few minutes until it comes together into a smooth ball.
- Bake the bulla in the preheated oven for approximately 15-20 minutes, or until they are firm to the touch and have a light-brown color.
- While the bulla are still warm, brush them with the melted butter for a glossy finish.
- Remove the bulla from the oven and allow them to cool on a wire rack. They will firm up as they cool.
