This is a combination of delicious Jamaican stewed chicken and penne pasta. Good any time of the day!
STEW CHICKEN PASTA

- Chicken
5 Chicken legs
1 ½ tsp all purpose seasoning
1 ½ tsp onion powder
1 ½ tsp garlic powder
1 tsp salt
1stp thyme leaves
¼ tsp ginger powder
¼ tsp black pepper
¼ medium onion
2 stalks scallion
1 clove garlic
Pepper (according to your liking)
1 ½ tbsp. dark soy sauce or 2tsp browning
2tbsp Oil
3 cups water
¼ Bell peppers (Red, green, and yellow)
6 Pimento seeds
¼ medium Tomato
¼ cup Ketchup
- Pasta
250g penne pasta
½ tbsp. Oil
½ tsp Salt
½ tsp all-purpose seasoning
Water to cover pasta
Directions
- Chicken
- Remove the skin from the chicken legs, cut them in 2 pieces and clean your meat
- Season the chicken legs with all the dry and fresh seasonings except bell peppers, tomato, pimento seeds
- Cover the seasoned chicken and leave it to marinate for at least 1hr
- Remove the chicken from the fridge at least 10 minutes before you cook
- To a pot over medium heat, add 2tbsps oil and add the chicken pieces one at a time without the freshly cut seasonings
- Allow the chicken to get brown on each side
- Once the chicken has a brown colour on each side, add water to the container in which your chicken was resting then add the water to the chicken
- Allow everything to come to a boil
- Add bell peppers, tomato, and pimento seeds
- Allow everything to now cook for an additional 5 minutes
- Add ketchup and allow to simmer for 5-6 minutes or until the gravy is nice and thick
- Pasta
- In a pot, add water, all-purpose seasoning and salt then allow this to come to a boil
- Add the pasta and oil and allow this to cook until it is nice and Al dente
- Strain the water from the pasta
- Putting it together
- Add the drained pasta to the stewed chicken and mix until everything is nicely combined
- Enjoy
