Ingredients

  • 1 cup flour

  • 1 cup pineapple

  • ½ cup desiccated coconut / coconut meat

  • ½ cup butter

  • ½ cup granulated sugar

  • ¼ tsp salt

  • ¼ cup pineapple juice

  • 1 tbsp vanilla extract

  • 1 tsp lemon juice

  • 1tsp baking soda

  • 1tsp baking powder

  • 2 eggs

  • sesame seeds (optional)

Directions

  • In a bowl, add melted butter then mix sugar in
  • Add vanilla extract and then the beaten egg mixture half at a time and mix well
  • In another bowl, add flour, desiccated coconut, baking powder, baking soda, salt and mix
  • Add half the dry ingredients to the wet ingredients and mix well
  • Add the pineapple juice and the partially blended pineapple to the mixture and mix well
  • Add the mixture in a baking tin then top it off with some coconut
  • Bake at 150◦C for 50mins
