Pineapple Coconut Cake Pina Colada Cake

1 cup flour
1 cup pineapple
½ cup desiccated coconut / coconut meat
½ cup butter
½ cup granulated sugar
¼ tsp salt
¼ cup pineapple juice
1 tbsp vanilla extract
1 tsp lemon juice
1tsp baking soda
1tsp baking powder
2 eggs
sesame seeds (optional)
Directions
- In a bowl, add melted butter then mix sugar in
- Add vanilla extract and then the beaten egg mixture half at a time and mix well
- In another bowl, add flour, desiccated coconut, baking powder, baking soda, salt and mix
- Add half the dry ingredients to the wet ingredients and mix well
- Add the pineapple juice and the partially blended pineapple to the mixture and mix well
- Add the mixture in a baking tin then top it off with some coconut
- Bake at 150◦C for 50mins
