PINEAPPLE CHICKEN

Ingredients

  • 5 small boneless chicken thighs

  • 1 cup potato starch

  • ¼ tsp Sesame seeds (optional)

  • MARINADE
  • 1tsp salt

  • ½ tsp black pepper

  • ½ tsp wite pepper

  • 1tsp onion powder

  • 1tsp garlic powder

  • ½ tsp freshly grated ginger

  • ½ tsp ginger powder

  • ¼ tsp chili flakes

  • SAUCE
  • ¼ small onion

  • 1/3 red bell pepper

  • 1/3 green bell pepper

  • 2 cloves garlic

  • 1tsp oil

  • ¼ tsp chilli flakes

  • 2 cups pineapple juice

  • 3-4tbsp sugar

  • ½ tsp salt (optional)

  • 1 tsp soy sauce

  • 1 tsp vinegar

  • 1 ½ cups cubed pineapples

  • Starch slurry ( ½ tbsp potato starch + ½ cup water)

Directions

  • In a bowl, add bite sized chicken thigh pieces
  • Add marinade ingredients and coat each piece of chicken
  • Allow this to marinate for 30mins
  • Add 1 cup potato starch or starch of choice
  • Fry the chicken pieces in oil over medium heat until they are golden brown on each side
  • Rest chicken aside to drain
  • In a pan over low heat, add 1tsp oil
  • Add onion and bell peppers to the oil and sauté for 2 mins
  • Add minced garlic
  • Add pineapple juice, sugar, vinegar, soy sauce and chili flakes then allow this to come to a boil
  • Add Starch slurry
  • Add cubed Pineapples
  • Allow this to thicken a little
  • Turn your stove off and add chicken pieces
  • Mix everything together until all pieces of chicken are nice and coated in the sauce
