PINEAPPLE CHICKEN

5 small boneless chicken thighs
1 cup potato starch
¼ tsp Sesame seeds (optional)
- MARINADE
1tsp salt
½ tsp black pepper
½ tsp wite pepper
1tsp onion powder
1tsp garlic powder
½ tsp freshly grated ginger
½ tsp ginger powder
¼ tsp chili flakes
- SAUCE
¼ small onion
1/3 red bell pepper
1/3 green bell pepper
2 cloves garlic
1tsp oil
¼ tsp chilli flakes
2 cups pineapple juice
3-4tbsp sugar
½ tsp salt (optional)
1 tsp soy sauce
1 tsp vinegar
1 ½ cups cubed pineapples
Starch slurry ( ½ tbsp potato starch + ½ cup water)
Directions
- In a bowl, add bite sized chicken thigh pieces
- Add marinade ingredients and coat each piece of chicken
- Allow this to marinate for 30mins
- Add 1 cup potato starch or starch of choice
- Fry the chicken pieces in oil over medium heat until they are golden brown on each side
- Rest chicken aside to drain
- In a pan over low heat, add 1tsp oil
- Add onion and bell peppers to the oil and sauté for 2 mins
- Add minced garlic
- Add pineapple juice, sugar, vinegar, soy sauce and chili flakes then allow this to come to a boil
- Add Starch slurry
- Add cubed Pineapples
- Allow this to thicken a little
- Turn your stove off and add chicken pieces
- Mix everything together until all pieces of chicken are nice and coated in the sauce
