I have always loved eating Toto but I was never able to get the recipe right until now. Everything was on point, the texture and flavour too. You can enjoy a piece of this in the morning or it can also be a simple snack after dinner. Enjoy this simple recipe, made easy in Roma’s Kitchen.

Jamaican Toto otherwise known as Coconut Cake

Ingredients

  • ¾ cup brown sugar

  • ½ cup salted butter

  • 2 eggs

  • 2 tbsp. rum

  • 2 tsp vanilla extract

  • 1 cup milk

  • 1 ½ cups all-purpose flour

  • 2 tsp baking powder

  • 2 tsp nutmeg

  • 1 tsp cinnamon powder

  • 1 cup grated coconut

Directions

  • In a bowl, cream butter, and sugar
  • Add rum to beaten eggs and whisk until combined
  • Add the egg mixture to the creamed butter and sugar in 2 halves and mix well
  • Add the milk and vanilla extract, mix well then rest the mixture on the side
  • In a separate bowl, add flour, baking powder, nutmeg, and cinnamon powder and mix well
  • Add the dry ingredients to the wet ingredients in 2 halves and combine
  • Add the grated coconut to the mixture and combine
  • Add the blended mixture to a greased and floured or lined tin and bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
  • Allow the Toto to cool down
  • Enjoy!

Notes

  • If salted butter is used, salt doesn’t need to be added
  • If unsalted butter is used, use just a pinch of salt
