I have always loved eating Toto but I was never able to get the recipe right until now. Everything was on point, the texture and flavour too. You can enjoy a piece of this in the morning or it can also be a simple snack after dinner. Enjoy this simple recipe, made easy in Roma’s Kitchen.

Ingredients
¾ cup brown sugar
½ cup salted butter
2 eggs
2 tbsp. rum
2 tsp vanilla extract
1 cup milk
1 ½ cups all-purpose flour
2 tsp baking powder
2 tsp nutmeg
1 tsp cinnamon powder
1 cup grated coconut
Directions
- In a bowl, cream butter, and sugar
- Add rum to beaten eggs and whisk until combined
- Add the egg mixture to the creamed butter and sugar in 2 halves and mix well
- Add the milk and vanilla extract, mix well then rest the mixture on the side
- In a separate bowl, add flour, baking powder, nutmeg, and cinnamon powder and mix well
- Add the dry ingredients to the wet ingredients in 2 halves and combine
- Add the grated coconut to the mixture and combine
- Add the blended mixture to a greased and floured or lined tin and bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
- Allow the Toto to cool down
- Enjoy!

Notes
- If salted butter is used, salt doesn’t need to be added
- If unsalted butter is used, use just a pinch of salt
