Jamaican rock buns are a popular baked treat in Jamaica and the Caribbean. They are sweet, spiced, and have a distinctive crumbly texture. While the name might suggest a hard or dense consistency, Jamaican rock buns are actually quite tender and somewhat crumbly, similar to scones.

Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, cold and cubed
1 cup raisins or currants
2 large eggs, beaten
1 teaspoon vanilla extract
1/4 cup milk
Directions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Add the cold, cubed butter to the dry ingredients. Use your fingers or a pastry cutter to rub or cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the raisins or currants.
- In a separate bowl, whisk together the beaten eggs, vanilla extract, and milk.
- Make a well in the center of the dry ingredients and pour the wet ingredients into it. Mix until just combined. Be careful not to overmix; the dough should be somewhat lumpy.
- Drop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each bun.
- Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the rock buns to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
