Jamaican Ginger Bulla cake, usually referred to as bulla, is a popular treat in Jamaican , made with molasses and spiced with ginger, nutmeg etc. This is best eaten with avocado, cheese or butter.

4 cups all purpose flour
½ stick or 100g unsalted butter
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon powder
1 tsp nutmeg
2 tbsp ginger powder
1 ¼ cups brown sugar
¼ cup freshly grated ginger
1 cup water ( ½ cup to be exact but it is good to have a little extra)
2 tbsp molasses (1 tbsp to be exact but if 1 cup of water is used, 2tbsp should be used also)
1 tsp vanilla extract
2 tbsp Melted butter to brush bulla
Directions
- Preheat oven to 350◦
- Add vanilla extract, rose water, molasses and sugar to water then mix to get them dissolved
- In a bowl, add flour, baking soda, baking powder, ginger powder, salt, nutmeg, cloves, fresh ginger, and mix
- Cut butter in small cubes, add it to the dry ingredients mixture and crush it together until it forms a bread crumb like consistency
- Add wet ingredients mixture to dry ingredients mixture a little at a time until a soft sticky dough is formed
- Cover dough and let it rest for 15 minutes
- On a surface covered with flour, roll the sticky dough out to 1” thick
- Cut the dough in circles
- Add the dough to a parchment paper on a baking tray
- Bake 25mins at 350◦
- Brush hot bullas with melted butter
- Allow to cool
- Enjoy with avocado or cheese
