Jamaican Black Fruit cake or Christmas cake is a decadent Caribbean twist on the classic holiday fruit cake that you’ll love serving this Christmas! This year I have decided add new things to my old recipe and the outcome is perfect! The cake is even more delicious. My fruits have been stewed with spices and soaked for 1 year which is bound to give the cake more flavour! I hope you’ll like the recipe! Happy holiday when it comes ❤️

Ingredients

  • Wet Ingredients**
  • 2 sticks of unsalted butter

  • 2 cups soft brown sugar

  • 5 eggs

  • 1tbsp. lemon juice

  • 1tbsp. freshly squeezed orange juice

  • 1 tsp lemon zest

  • 1 tsp orange zest

  • 1 tbsp Vanilla extract

  • ¼ tsp Rose water

  • 1 tbsp molasses

  • 5 ½ tbsp browning

  • 2 – 2 ½ cups stewed and blended fruits

  • Dry Ingredients**
  • 2 Cups All-purpose flour

  • ½ cup cracker crumb

  • 1 ½ tsp baking powder

  • 1 ½ tsp Salt

  • 1 tsp Freshly grated nutmeg

  • 1 tsp Cinnamon powder

  • ¼ tsp Cloves powder

  • 1 tsp Ginger Powder

  • 1 tbsp vanilla Powder

Directions

  • In a bowl cream butter and sugar
  • Add 2 eggs at a time to the creamed butter and sugar
  • After the eggs and creamed butter and sugar have been nicely combined, add lemon and orange juice, lemon and orange zest, vanilla extract, rose water, molasses and the stewed and blended fruits then combine
  • Set the wet ingredients to the side and add all the dry ingredients together in a bowl and whisk to ensure even distribution of the spices
  • Add the dry mixture to the wet mixture a little at a time and fold it in.
  • Once the dry ingredients have been properly folded in, add the browning. You can add more or less browning if you so desire
  • Add the mixture to a greased and lined tin
  • Add it to a preheated oven
  • Bake at 300F over a WATER BATH for 1hr. and 50mins or until a toothpick inserted in the middle comes out clean
  • Spray the hot cake with a mixture of rum and wine and leave it to cool down completely
  • Enjoy!

Notes

  • Do not exceed 6 tbsps of browning for this amount of batter as too much browning will make your cake bitter
