A rich and thick blend of pumpkin and spices! Perfect before a meal with a host of Caribbean flavors
CREAM OF PUMPKIN SOUP

1lb pumpkin
3 cups water
1/2 tsp thyme leaves
1/4 tsp salt
⅛cup coconut milk
2 stalks scallion
1 scotch bonnet pepper
1 piece of onion
1tbsp Grace pumpkin soup mix
Directions
- In a pot, add water, pumpkin, onion, scallion, thyme leaves and salt then allow this to boil until the pumpkin is soft
- Remove the onion, scallion and pepper
- Add the pumpkin in a blender with only ¼ cup of the liquid. If you don’t like your soup really thick then you can add all or a little more of the liquid
- Blend together
- Add the blended pumpkin back to the pot over low heat
- Add coconut milk, 1tbsp pumpkin soup mix and allow this to simmer for a few minutes
- Share and enjoy
