I have not had Coconut Rock Buns in ages and now that I am in quarantine, I took the time to make it. These are the best I have ever had. The recipe is perfect! These normally have raisins in them but I’m not a fan. Enjoy your chewy rock buns with a glass of milk!

Ingredients
2 cups All Purpose Flour
¼ tsp or less Slat
½ tbsp Baking Powder
100g or 1 stick of Unsalted Butter
¼ tsp Fresh Nutmeg
¼ tsp Cinnamon Powder
½ cup Brown Sugar
1 Egg
¼ tsp Lemon Juice (Optional)
½ tsp Vanilla Extract
½ tsp Almond Extract
1 cup Desiccated or Freshly Grated Coconut
1-1t¼ cup Lite Coconut Milk
- Raisins
Directions
- In a bowl, add flour, salt, baking powder, cinnamon powder, and nutmeg
- Add the butter in small chunks and rub the butter in the dry ingredients to create a bread-like consistency
- Add sugar, milk, egg, lemon juice, vanilla, and almond extract to the breadcrumb like dry ingredients
- Add desiccated or freshly grated coconut
- Add milk and combine
- Use a spoon or scoop to add the mixture in small portions to a greased sheet or tin
- Use the spoon or scoop to flatten the buns
- Bake for 15-20 mins at 350 or until buns are fully baked
- Enjoy with a glass of milk

Notes
- Raisins are usually added. Add the amount that suits you to the mixture
- Regular milk can be used instead of lite coconut milk.
