500g raisins
500g currants
500g prunes
600g cherries
100g mixed peels
3 pieces died orange peel
1-2 cinnamon sticks
2 tbsp vanilla extract
2 tsp freshly grated nutmeg
1 tsp cinnamon
¼ tsp cloves
Directions
- Remove small stems/stalks from raisins and currants if there are any and wash well
- Add the pieces of orange peel to 2 cups of water and allow this to come to a boil
- Add the washed raisins and currants, prunes, mixed peels, cherries and spices
- Add enough water to reach the same level of the fruits
- Mix everything and allow this to come to a boil
- Reduce the heat to the lowest it can go and allow your fruits to steam while checking back every 20 mins
- Leave this to steam with the spices for 1 hr and 20 mins or until all the water has been evaporated
- Blend the fruits with rum and sweet wine
- Add the portion of wine and rum according to your liking
- Enjoy
- Allow the steamed fruits cool and remove the orange peels and cinnamon sticks
