Jamaican Saltfish Fritters is a classic Jamaican breakfast dish!

Ingredients
½ lb salt fish (cod fish)
3 cups all-purpose flour
1/3 red, green, yellow bell peppers
¼ small red onion
½ tsp baking powder
½ tsp salt
½ tsp pepper
Scotch bonnet pepper (according to your liking)
2 ½ cups water
2 ½ cups oil for frying
Directions
- Boil Saltfish for 6 minutes to remove some of the salt
- Remove the scales and bones then break your saltfish into small pieces and rest it to the side
- Add the saltfish to 3 cups of all purpose or plain four
- Add bell peppers, onion, and scotch bonnet pepper according to your liking
- Add baking powder, salt, pepper
- Add water and mix
- In a pot over low heat, use a spoon to add your fritters to the oil
- Add 1 spoon full or more depending on the size you want for your fritters
- Fry them for 4 minutes or until golden brown and crispy on each side
