If you have ever thought about tossing those overripe plantains, DON’T! This plantain recipe is really yummy and it gives a really great spread.

Ingredients
3 ½ small ripe plantains (2 cups plantain puree)
4tbsps lemon juice
1 cup granulated sugar
¾ cup water
1tsp vanilla extract
Directions
- Add plantains and lemon juice to a blender and blend until you get a smooth puree.
- In a pot over low heat, add water and sugar
- Mix until the sugar has been dissolved
- Add the plantain and lemon juice mixture
- Stir until all is nicely combined
- Turn your stove to medium low and allow this to cook for 20 minutes or until the mixture is thick and the sides of the pot are getting dry
- Turn your stove off and allow this to cool
- Add in an airtight container and keep refrigerated for up to one month
- Enjoy
