Jamaican Escovitch fish is a dish where fried fish is topped with a spicy sauce and pickled vegetable medley. Best when eaten with Jamaican Festival Dumplings or Bammy.

3 small fishes
2 tsp fish seasoning
½ tsp onion powder
½ tsp black pepper
¼ tsp thyme leaves
2-3 cups of oil for frying fish
- ESCOVITCH SAUCE
½ scotch bonnet pepper
21 pimento grains
½ small onion, 1/3 red and green bell peppers
¼ small carrot
¾ cups vinegar
1 ½ tbsp granulated sugar
Directions
- Wash and clean fish
- Add 1 or 2 slices on each side of the fish
- Add the seasoning all over the fish, and also ensure to get the seasoning all inside
- Allow the seasoned fish to rest for 10 mins
- In a pot over low heat, add all ingredients for the escovitch sauce and allow it to come to a boil for 4 mins then leave it to cool
- In a pot over medium heat, add oil, scotch bonnet pepper and garlic
- Allow the oil to heat up
- Remove the pepper and garlic if you so desire
- To the hot oil, add the fish
- Fry the is for 6 minutes or until it is nice and crispy on each side
- Remove the fish from the oil and set to drain
- Add the fish on top of the escovitched vegetables then add the remaining vegetables on top of the fish
- Add the escovitched liquid all over the fish and allow it to soak in
