The Jamaican cornbread is an island comfort food. Moist and delicious, made from refined cornmeal and other fresh ingredients. Good to go with any BBQ dish or simply by itself with a glass of your favorite drink.
JAMAICAN CORN BREAD

1 ½ cups Cornmeal
1 cup Flour
1 can Coconut Milk
¼ cup sugar (brown or granulated)
50g or 4tbsps. Butter
1tsp salt
1 tsp honey
1 tbsp. Vanilla Extract
2 eggs
1 ½ tsp baking powder
½ tsp baking soda
Directions
- Preheat oven to 350◦
- Mix Cornmeal with coconut milk and set aside for 10 minutes
- Add sugar, butter, honey, eggs, vanilla extract in a bowl and mix until everything is nicely combined
- Add the mixture from #3 to the cornmeal and coconut milk mixture then mix both together until all is nicely combined
- Sieve flour, salt, baking powder, baking soda then add it to the mixture
- Mix well
- Add to a greased baking tin
- Bake for 40 minutes or until a toothpick inserted in the middle of your bread comes out clean
- Enjoy
