The Jamaican Black Cake is the traditional cake baked by most Jamaicans during the Christmas season. This usually has a combination of fruits soaked in and blended with Jamaican White Rum and sweet red wine then baked with a host of great spices! Even though this is a must have for the festive season, it is also good any time of the year.

2 cups unsalted butter
2 cups soft brown sugar
8 eggs
2 tsp lemon zest ( you may add 2tsp orange zest for extra flavor)
2 tsp lemon juice
3-4 cups stewed blended fruits
6tbsp browning (use less if you do not like your cake dark)
1 tbsp. molasses
1 tbsp. vanilla extract
1 tbsp. rose water
2 tsp almond essence
2 ½ cups all-purpose flour OR 2 cups flour and ½ cup breadcrumbs
1 tsp cinnamon powder
1 tsp nutmeg
¼ tsp cloves
1 ½ tsp salt
1 ½ baking soda or 3 tsp baking powder
Directions
- Preheat oven to 350 ◦
- Cream butter and sugar
- In a bowl remove chalaza from eggs, add lemon juice and zests to eggs and beat everything together
- Add egg mixture to the creamed butter and sugar 1/8th at a time and mix until all is combined
- Add vanilla extract, rose water, almond essence to the mixture
- Add BLENDED FRUITS
- Mix everything together
- Add browning and molasses
- Sieve flour, cinnamon powder, nutmeg, cloves, salt, baking soda
- Mix dry everything together
- Add dry ingredients to wet ingredients 1/3 at a time
- Add mixture to a greased and lined tin
- Bake over a water bath for 1 ½ hrs or until a toothpick is inserted in the middle and comes out clean
- Spray cake with sweet red wine immediately after removing it from the oven then allow it to cool
