EGG AND PLANTAIN FRITATA

4 Eggs
1 Sausage of choice
Red bell pepper
Green Bell Pepper
Onion
Tomato
½ tsp Curry Powder
¼ tsp All Purpose Seasoning
½ tsp Salt
¼ tsp Black Pepper
¼ tsp Cayenne Pepper
1-2 Plantain
Directions
- Cut 1-2 plantains in circles, fry them then rest it to the side
- Grease your pot and keep pot over low heat
- Add tomatoes, onion, bell pepper and sauté
- Add finely cut sausage
- Add salt, all-purpose seasoning, cayenne, and black pepper
- Allow seasonings and beef sausage to cook for 2 minutes
- Add curry powder, mix again, and allow to cook for another 2 minutes
- Rest Filling to the side
- Beat 4 eggs in a container with a pinch of salt and pepper
- Add filling and combine
- Add egg + filling to a lightly greased baking tin
- Add fried plantain on top of the mixture until it has been fully covered
- Bake for 20-25 at 350◦ F
- Enjoy
