EGG AND PLANTAIN FRITATA

Ingredients

  • 4 Eggs

  • 1 Sausage of choice

  • Red bell pepper

  • Green Bell Pepper

  • Onion

  • Tomato

  • ½ tsp Curry Powder

  • ¼ tsp All Purpose Seasoning

  • ½ tsp Salt

  • ¼ tsp Black Pepper

  • ¼ tsp Cayenne Pepper

  • 1-2 Plantain

Directions

  • Cut 1-2 plantains in circles, fry them then rest it to the side
  • Grease your pot and keep pot over low heat
  • Add tomatoes, onion, bell pepper and sauté
  • Add finely cut sausage
  • Add salt, all-purpose seasoning, cayenne, and black pepper
  • Allow seasonings and beef sausage to cook for 2 minutes
  • Add curry powder, mix again, and allow to cook for another 2 minutes
  • Rest Filling to the side
  • Beat 4 eggs in a container with a pinch of salt and pepper
  • Add filling and combine
  • Add egg + filling to a lightly greased baking tin
  • Add fried plantain on top of the mixture until it has been fully covered
  • Bake for 20-25 at 350◦ F
  • Enjoy
