COCONUT SHRIMP with Piña Colada Dipping Sauce

Ingredients
- Shrimp
12 jumbo shrimp
1 tsp all-purpose seasoning
½ tsp salt
½ tsp black pepper
½ tsp onion powder
½ tsp garlic powder
½ tsp chili powder
1 tsp olive oil
- Batter
1-2 eggs
1 tsp all-purpose seasoning
¼ chili powder
2tbsp. flour
- Piña Colada Sauce
2 tbsps. crushed pineapple
2 tbsps. coconut cream
2 tsps. brown sugar
1tsp granulated sugar
(Corn starch slurry) 1tsp corn starch + 1tbsp pineapple juice
1tbsp pineapple juice
- Other ingredients
2-3 cups oil for frying
1 cup flour
1 ½ cup unsweetened coconut flakes
Directions
- Shrimp
- Clean and butterfly your shrimp
- Add the seasoning and oil to your shrimp then gently rub seasoning all over your shrimp and leave to marinate for a few minutes
- Combine the ingredients for the batter and set it aside
- Prepare the coconut flakes and flour
- Add each shrimp to the batter then add a light coating of flour then fully cover with unsweetened coconut flakes
- In a pot over medium-high heat, add the covered shrimp and fry for 4-5mins or u until golden brown on each side
- Piña Colada Dipping Sauce
- Ina pot over very low heat, add crushed pineapple
- Add coconut cream and sugar then mix well
- Add corn-starch slurry and mix well
- Add extra pineapple juice and sugar according to your liking
- Turn the heat off and allow this to cool then blend until semi smooth
- Serve chilled
