Ingredients
1 cup unsalted butter
1 ½ cups granulated sugar
2 eggs
¼ tsp lemon juice
½ tsp vanilla extract
½ tsp almond extract
1 ½ cups All-purpose flour
½ tsp baking powder
½ – 1tsp salt
½ cup unsweetened desiccated coconut
½ cup evaporated coconut milk/ coconut cream
Directions
- In a bowl, cream butter and sugar
- Add eggs one at a time and mix until nice and smoothly combined
- Add vanilla extract, almond extract, coconut milk and mix
- Combine the dry ingredients in a separate bowl and use a whisk to ensure even distribution of all ingredients
- Add half the dry ingredients to the wet ingredients and combine
- Add the other half of the dry ingredients and combine
- In a greased tin, add the mixture
- Bake at 350◦ for 45mins or until a toothpick inserted in the center of the cake comes out clean. Enjoy
