Easy Coconut Cake Recipe

Ingredients

  • 1 cup unsalted butter

  • 1 ½ cups granulated sugar

  • 2 eggs

  • ¼ tsp lemon juice

  • ½ tsp vanilla extract

  • ½ tsp almond extract

  • 1 ½ cups All-purpose flour

  • ½ tsp baking powder

  • ½ – 1tsp salt

  • ½ cup unsweetened desiccated coconut

  • ½ cup evaporated coconut milk/ coconut cream

Directions

  • In a bowl, cream butter and sugar
  • Add eggs one at a time and mix until nice and smoothly combined
  • Add vanilla extract, almond extract, coconut milk and mix
  • Combine the dry ingredients in a separate bowl and use a whisk to ensure even distribution of all ingredients
  • Add half the dry ingredients to the wet ingredients and combine
  • Add the other half of the dry ingredients and combine
  • In a greased tin, add the mixture
  • Bake at 350◦ for 45mins or until a toothpick inserted in the center of the cake comes out clean. Enjoy
