3 ¾ cups all-purpose flour
1 packet (2 ¼ tsp) active dry yeast
½ cup warm milk (110°F)
½ cup pumpkin puree (not pumpkin pie filling)
¼ cup granulated sugar
¼ cup unsalted butter, softened
1 egg
1 tsp vanilla extract
½ tsp salt
½ tsp cinnamon
¼ tsp nutmeg

8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
- For the Egg Wash
1 egg
1 -2 tbsp butter
- For Topping (Optional)

Directions
- Prepare the Dough
- In a small bowl, combine all the dough ingredients and knead well.
- Place the dough in a greased bowl, cover it, and let it rise for 1 to 1.5 hours, or until it has doubled in size.
- Make the Cream Cheese Filling
- In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Cover and let the dough rise while it chills.
- Assemble the Buns
- Punch down the dough and divide it into seven or more pieces.
- Flatten each piece into a circle and place a spoonful of the cream cheese filling in the center.
- Pinch the edges together to seal and form a smooth ball. Place seam-side down on a parchment-lined baking sheet.
- Cover and let rest for 30 minutes.
- Bake the Buns
- Preheat oven to 350°F (175°C).
- Brush the buns with egg wash.
- Add toppings (optional)
- Bake for 18–22 minutes or until golden brown.
