This cakes brings the ultimate tropical vibe. Put all those mangoes in your household to use and make a MANGO loaf. This pretty easy to make as I was only playing around in the kitchen, put some ingredients together and this beautiful loaf of sunshine was beyond delicious!

2 cups all purpose flour
1 cup mango puree
1 cup granulated sugar
1 cup vegetable oil
1tbsp vanilla extract
1tsp baking powder
1 tsp baking soda
¼ cup milk
½ tsp salt
1 egg
¼ tsp lemon juice
Peanuts (optional)
Directions
- In a bowl, add 1cup of granulated sugar
- Add egg, lemon juice, milk, vanilla extract, oil and mix well
- Add mango puree and mix well
- Add flour, baking powder, baking soda and salt then mix well together
- Add the mixture to a greased loaf or cake tin
- Top it off with your favourite nuts (optional)
- Bake for 40mins at 350◦ or until a toothpick inserted in the centre comes out clean
- Cool and enjoy
