MANGO CAKE/ MANGO LOAF

This cakes brings the ultimate tropical vibe. Put all those mangoes in your household to use and make a MANGO loaf. This pretty easy to make as I was only playing around in the kitchen, put some ingredients together and this beautiful loaf of sunshine was beyond delicious!

Ingredients

  • 2 cups all purpose flour

  • 1 cup mango puree

  • 1 cup granulated sugar

  • 1 cup vegetable oil

  • 1tbsp vanilla extract

  • 1tsp baking powder

  • 1 tsp baking soda

  • ¼ cup milk

  • ½ tsp salt

  • 1 egg

  • ¼ tsp lemon juice

  • Peanuts (optional)

Directions

  • In a bowl, add 1cup of granulated sugar
  • Add egg, lemon juice, milk, vanilla extract, oil and mix well
  • Add mango puree and mix well
  • Add flour, baking powder, baking soda and salt then mix well together
  • Add the mixture to a greased loaf or cake tin
  • Top it off with your favourite nuts (optional)
  • Bake for 40mins at 350◦ or until a toothpick inserted in the centre comes out clean
  • Cool and enjoy
